As they do not have any other VM's that run on the datatsore, you should be good to run a VM of around 1.8TB on that datastore.
Its always good to leave a buffer size for the datastores.
Also, as far as you don't have backup products which leverage snapshot technology to take backup you should not be concerned about it.
Make sure no one takes manual snapshots too.
