1. Does the LUN need to be resignatured for the new vCenter?
No. The signature is stored on the LUN itself (i.e. identifies it), and if you resignature it, the old hosts will lose access.
2. What risks / caveats / gotchas are there to this scenario?
Take care that the VM's are not used in both environments.
