I'd create a single RAID5 set with all 6 disks (or 5 disks + hot spare) and use the ACU (Array Configuration Utility) to create at least two logical volumes on this RAID set. Although it's not required to create multiple volumes from a technical point of view, this configuration will allow you to "play" with features like migration/storage vMotion in the lab environment. Btw. you'll get a much better disk performance with BBWC (512MB or more) for the RAID controller.
