You have to create an optimized datastore for each different offset. Why don't you use the VSC Optimization and Migration "Scan Manager"? It will help you (a little bit...) to find out the needed offsets.

Maybe Im missing something, but  VSC doesnt list out the offsets of the actual VM's/VMDK's. There are  Misaligned > Online Migration > Group 1, 2, etc... but nothing  that tells me the offset....

No way to know after the fact. Before the fact, you could make sure that the host shows the storage as VAAI capable, and that the transfer meets all the requirements for a XCOPY accelerated xfer.

Thanks.  That's kind of what I was vaguely suspecting.  So, where does the sharing take place?  Is the storage attached to both hosts?  Or is just attached to one host, and then shared in the vSphere?

The storage is generally (there are excpetions to this) attached to each host.  The mediation on who can write when/where is accomplished by holding locks on various parts of the filesystem.
